Anybody want spinach?

Anybody want some? I have a huge bag of it. I've been hunting spinach recipes today to try and use up this stuff before it goes bad. Many of the recipes I found are on my Pinterest "R.ecipe box" board.

Tonight, Mr. W and made our own version of these recipes:

These recipes call for more people and more ingredients than we own in our home right now, so we improvised with Kraft Macaroni and Cheese and these recipes with the help of our Better Homes and Garden Cook Book.

I'm sorry I cannot provide actual measurements, but it is a fun exercise to feel like a real chef and make things according to how they look and taste without strict measurements.

Cooking time: Maybe 30 minutes or less
Serving Size: about 3-4 servings


Here's exactly what we used:

  • 1 box of Kraft Mac'n'Cheese
  • 1 cup Skim milk
  • 5 tbsp or so of Parmesan Cheese
  • 1 slice Pepper Jack Cheese
  • 1 tbsp of Butter
  • 1 tbsp Flour
  • 2 cups or so of Spinach
  • Salt
  • Ground Pepper


1. Macaroni directions: We boiled the macaroni noodles so that it would cook while we made the sauce.

2. Cheese and Spinach Sauce: melt the butter in a sauce pan on medium heat, then add the flour. It may look a little clumpy, but it will smooth out as you stir in the milk. Then, add the Kraft cheese packet, the pepper jack cheese (torn up into bits so it melts faster), and the parmesan cheese [use whatever cheeses you want] till everything is melted and it looks like a sauce. Depending on the consistency of it, you may want to add a little more milk so it isn't too thick. Whenever you're ready add the spinach while tearing it into pieces - it will wilt, which is what you want, and depending on how much spinach you want add more or less. Pour in the strained macaroni and mix it all up, and then add salt and pepper to taste!
